Green coffee behaves like a moisture-bearing agricultural product, because that is exactly what it is. Density, moisture content, bean size and processing method all vary by origin and lot, and every one of those variables changes how the same profile plays out in the drum.

Using it well

  • Record the lot, arrival date and moisture reading for every bag. Two years from now that log is the reason you can repeat a great roast.
  • Denser, higher-grown beans generally tolerate a faster early roast and a higher charge temperature.
  • Natural-processed beans often roast faster toward the end. Expect a more volatile finish.
Safety considerations

Not intended for eating raw. Keep green coffee away from food-preparation surfaces and out of reach of children and pets.
