Grind is the fastest lever you have. If the cup tastes sour or thin, grind finer; if it tastes bitter or dry, grind coarser.
TDS and ratio numbers describe strength and extraction, not quality. A coffee can measure perfectly and taste dull, or measure oddly and taste wonderful. Use the numbers to diagnose problems, not to replace your palate.
