Cupping Spoon
A deep-bowled spoon designed to slurp a sample across the full palate.
Overview
The deep bowl of a cupping spoon holds enough liquid for a proper slurp, which aerates the coffee and spreads it across the tongue and retronasal passage at once. That is why cupping spoons look odd and work well.
Using it well
- Slurp hard. The point is aeration, not sipping politely.
- Rinse the spoon in hot water between bowls to avoid carrying flavour forward.
- Judge sweetness and acidity while the coffee is warm, and body and balance as it cools.
Coffee in the bowl is hot. Slurp carefully and avoid drinking large volumes of very hot liquid, which carries a genuine burn risk. Do not share spoons between cuppers.
Why this matters
The cupping spoon sits in the cupping & cleaning stage of a roast. Getting it right removes one source of variation, which matters because roasting rewards consistency more than any single clever adjustment. Change one variable at a time, record what you did, and compare batches rather than judging any single roast in isolation.
