Roasting tongs let you take a physical sample mid-roast without shutting the machine down or reaching into a hot drum. Watching and smelling the actual beans is still the most reliable way to judge development, and it complements rather than replaces your probe readings.

Using it well

  • Sample at consistent intervals so you build a mental timeline rather than random snapshots.
  • Cool the sample quickly on a small plate before smelling it - hot beans give misleading aromatics.
  • Keep a dedicated pair for roasting. Tongs that have handled other materials introduce smells you will notice in the cup.
Safety considerations

The business end is inside a very hot environment. Use tongs with a proper insulated handle, never bare metal, and set them down on a non-combustible surface, not on a wooden bench.
